3 cup flowerets Broccoli Flower Clusters

2 cup Cauliflower

1 1/2 medium Carrots

6 oz Sweet Onions

8 oz, cooked Bacon

1 cup, shredded Cheddar Cheese

1 cup Real Mayonnaise

2 tbsp Sucralose Based Sweetener (Sugar Substitute)

2 tbsp Vinegar (Cider)

0 1/2 tsp Salt

0 1/4 tsp Black Pepper
DIRECTIONS
To make this recipe suitable for Phases 1 or 2, omit the carrots and add an equivalent amount of broccoli and/or cauliflower.- In a food processor, pulse broccoli until pieces are the size of peas. Repeat with cauliflower, then carrots and finally the sweet onion. (Or very finely chop the vegetables.) Place in large bowl.
- Add bacon and cheese to the vegetables and set aside.
- In a small bowl whisk mayonnaise, sugar substitute, vinegar, salt and pepper to combine. Pour dressing over the salad and stir to thoroughly combine.
