DIRECTIONS
This recipe is terrific for utilizing leftover Thanksgiving turkey meat.
- Bring a medium pot of salted water to boil. Add cauliflower; cook until just tender, about 4 minutes. Drain, cool under cold water, drain again, and coarsely chop.
- Meanwhile, melt butter in a large nonstick skillet over medium heat. Add white onion, thyme, salt, and pepper; cook until soft and light brown, about 6 minutes. Add cauliflower and cook 2 minutes longer.
- Increase heat to high. Add turkey and continue to cook, stirring occasionally, until well browned, about 6 minutes. Add cream and cook until almost dry, about 2 minutes. Serve warm. Top with an egg if desired (optional).
