INGREDIENTS

  • 8 Atkins Low Carb Wheat Bread
  • 2 oz Pitted Kalamata Olives
  • 8 slice, thin/small Red Tomatoes
  • 12 oz Tuna in Water (Canned)
  • 1 oz Dried Pine Nuts
  • 2 tbsp Parsley
  • 2 tablespoon Extra Virgin Olive Oil
  • 0 1/3 tbsp Red Wine Vinegar

DIRECTIONS

Use the Atkins recipe to make Atkins Low Carb Wheat Bread for this recipe.  You will need 8 servings.

  1. Spread each bread slice with 1/2 tablespoon olive spread and arrange two slices of tomato on four slices.
  2. In a bowl, mix tuna, pine nuts, parsley, olive oil and vinegar until ingredients are very well combined. Season to taste with salt and pepper.
  3. Spoon one-quarter of the tuna mixture on 4 slices of bread, olive spread side up. Pat down gently with a spoon.
  4. Cover tuna mixture with remaining bread slices, olive spread side down. Cut sandwiches in half diagonally.
