1 Tbsp peanut butter, reduced sugar

5 piece Atkins Endulge Peanut Butter Cups

8 fl-oz Atkins Milk Chocolate Delight Shake

3 fl-oz vodka

1 Tbsp chocolate syrup, sugar free
DIRECTIONS
- Rim the glasses: Place peanut butter on a small plate. If peanut butter is cold, microwave until warmed up enough to stick to the cup rim, about 20 seconds. Dip the rims of two 8-ounce cups in the peanut butter, then place peanut butter rim side down on a parchment paper covered baking sheet that will fit in your freezer. Sprinkle the exterior of the peanut butter rims with one diced or crumbled Atkins Endulge Peanut Butter Cup. Freeze until the peanut butter rim is solid, about 30 minutes.
- In a blender, add chilled Atkins Milk Chocolate Delight Shake, 4 chopped peanut butter cups, vodka, and chocolate syrup and process until completely blended, at least 3 minutes on high.
- To serve, pour half the vodka mixture (just more than ¾ cup) into each rimmed glass.
Cooking Tip
We love the peanut butter rim on this low carb cocktail. When coating the rims of the glasses, be sure to get some peanut butter on the inside and outside of the rim. Then use your fingers to help adhere the diced peanut butter cup to the peanut butter and freeze until the peanut butter is well set. The peanut butter cup pieces will slide down the glass if the peanut butter isn’t fully set before removing from the freezer. Knowing that cocktails can often trip us up when living a low carb lifestyle, this low carb, Halloween inspired option is a great find! As is, this recipe turns out pretty strong, so feel free to halve the vodka for a lower alcohol version.
