DIRECTIONS
Equipment note: We suggest using popsicle molds that each hold about 3 fluid ounces for this recipe. Alternatively, you can use silicone muffin cups, or non-waxed paper cups to make these ice pops.
- In a food processor, puree cubed fresh, ripe mango until smooth. If the mango is not quite ripe and does not want to puree, add one tablespoon of water at a time (no more than 4 tablespoons) until a pureed texture develops. You should have about 1 ¼ cups puree.
- In a small bowl, whisk together the yogurt and vanilla syrup until well combined.
- Into 3-fluid ounce popsicle molds, layer 1 tablespoon yogurt mixture, 1 tablespoon mango puree, 2 tablespoons yogurt mixture and top evenly with remaining mango puree, about 1 tablespoon per popsicle. Freeze until solid, about 4 hours. One popsicle is one serving.
