0 1/4 cup fresh cilantro, leaves

3 Tbsp canola oil

1 1/2 fl oz tequila

0 1/2 tsp black pepper, ground

0 1/8 tsp dried cayenne chili pepper, ground

32 oz raw chicken breast, skinless, boneless

2 Tbsp butter, unsalted
DIRECTIONS
- Heat oven 400°F.
- In a large bowl, combine chopped cilantro, oil, tequila, cumin, minced or pressed garlic, salt, pepper and cayenne. Add chicken and toss to coat.
- Transfer chicken to a baking sheet. Bake 15 to 20 minutes, or until largest piece is cooked through with an internal temperature of 165°F.
- Remove from oven and top each breast with 1/2 tablespoon butter and let melt.
