4 pepper Jalapeno Peppers

1 3/4 cup, chopped Peppers, sweet, green, fresh

0 1/2 tsp Garlic

2 Tbsp Ginger

2 tbsp Light Olive Oil

0 1/3 cup Xylitol

2 tbsp Fish Sauce

4 tbsp Sodium and Sugar Free Rice Vinegar

1 fl oz Tap Water
DIRECTIONS
For this recipe any pepper maybe used depending upon the level of heat desired. Additionally, crushed red chili pepper may be added to increase the heat level.- Remove stems, seeds and ribs from both the red bell peppers and the jalapenos. Place in a food processor along with the garlic clove and grated ginger. Pulse until finely chopped. Set aside.
- In a large skillet heat 2 tablespoons of oil. when hot add the minced pepper mixture and cook for 1-2 minutes until softened. Add the xylitol, fish sauce, rice vinegar and water. Simmer over low heat for 10 - 15 minutes. Adjust seasonings as needed by adding additional rice vinegar, xylitol or fish sauce depending upon your desire for sour, sweet or salty flavors. Serve immediately or store in an airtight container for up to 2 weeks. Serving size is 1 1/2 tablespoons.
- Optional: the mixture may be transferred to a blender and pureed to a finer consistency and then sieved through a fine mesh strainer if a clearer liquid is desired.
