INGREDIENTS

  • 0 1/2 cup Yellow Onion (chopped)
  • 0 1/4 cup, diced Celery, raw
  • 0 1/4 cup Almond Flour, Blanched
  • 2 Tbsp Tomato Paste, canned
  • 3 tsp Lea & Perrins, Worcestershire Sauce
  • 2 each Garlic, clove
  • 0 1/2 tsp Black Pepper, ground
  • 1 each Egg
  • 16 oz Ground beef, lean
  • 1 1/2 cup Birds eye mashed cauliflower
  • 4 each Black Olives, large

DIRECTIONS

  1. Heat oven to 350°F and prepare a 12 cup muffin tin with liners.
  2. In a medium bowl, combine the onion, celery, almond flour, tomato paste, Worcestershire, minced or pressed garlic, and pepper until evenly distributed. Add the egg and meat and use hands to gently combine. Do not overwork the meat.
  3. Measure a heaping ¼ cup of the meat mixture into each muffin cup and gently tap the mixture down. Bake for 30 minutes, or until an internal temperature of 160°F is reached. Remove from oven and let cool until ready to top.
  4. After the meatloaves have been in the oven for about 20 minutes, prepare the mashed cauliflower as directed on the package. Top each meatloaf with about 2 tablespoons of cauliflower. Use sliced olives, no sugar added ketchup, pickle slices, etc. to create a spooky look on the top of each (i.e. ghost face, big eyeball, etc.).
  5. Each serving is two mini meatloaves and 1/4 cup mashed cauliflower.
