1 package (10 oz) Spinach (Chopped or Leaf, Frozen)

1 medium (4-1/8" long) Scallions or Spring Onions

1 clove Garlic

2 pepper Jalapeno Peppers

0 1/2 cup Real Mayonnaise

6 tbsp Cream Cheese
-
0 1/2 oz Lemon Juice
-
0 1/4 tsp Old Bay Seasoning

4 serving Small Cooked Shrimp
DIRECTIONS
- Thaw spinach in the microwave for 1-2 minutes. Squeeze out excess water and place it into the bowl of a food processor. Coarsely chop the scallions, jalapeno and garlic and add to the food processor bowl. Process mixture until finely chopped.
- Add the mayonnaise, softened cream cheese, lemon juice and Old Bay seasoning. Pulse until fully combined.
- Add the shrimp and pulse just until the shrimp are finely chopped - about 10 seconds. Taste and adjust seasonings. Keep refrigerated until ready to serve. This recipe makes 2 cups. Serve with Cauliflower Fritters (see Atkins recipe) or with baked parmesan crisps or other low carb cracker.
