INGREDIENTS

  • 2 each Garlic, clove
  • 0 1/2 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 0 1/2 tsp Black Pepper, ground
  • 0 1/4 teaspoon Cayenne pepper
  • 0 1/4 teaspoon Chipotle pepper, ground spice
  • 3 1tsp Olive Oil
  • 24 oz Chicken Thigh, boneless, with skin

DIRECTIONS

Ingredient note: Bone-in, skin-on chicken thighs, and smoked paprika are recommended for this recipe.
  1. In a large bowl, mash the garlic and salt together until a paste forms. Add the spices and olive oil and mix until well combined. Add additional cayenne pepper if you prefer very spicy flavor.
  2. Place the chicken thighs, skin side down, into the spice mix in a single layer. For each thigh, slice along both sides of the bone. Then flip the chicken and make sure the marinade gets into the open slices. All the thighs should be well coated in spices and oil. Cover and set aside to marinate at room temperature until ready to grill.
  3. Preheat your grill so that the grates are between 390°F and 450°F. Place the thighs, skin side down, on the warmest part of the grill and cook for about 8 minutes. Flip, moving to a slightly cooler region of the grill, to cook for another 8 minutes. Then flip the chicken again and being checking the temperature, flipping every 8 minutes until it reaches an internal temperature of 165°F (20-35 minutes of grilling time depending on the size of the thighs). Remove from the grill and let cool slightly before serving.
