DIRECTIONS
Use the Atkins recipe to make Chili Spiced "Tortilla" Wraps and Cucumber Guacamole for this recipe.- Prepare wraps and guacamole; set aside.
- Heat oil in a large skillet over medium-high heat. Season fish with salt and freshly ground black pepper. Once oil is shimmering and hot cook fish until it is golden on both sides and no longer translucent in the center, about 10 minutes for a thick piece.
- Whisk together the sour cream, lime juice, ginger, cumin, a pinch of cayenne, and 1/8 teaspoon each of salt and freshly ground black pepper (or to taste).
- Toast pre-made tortillas for 3 minutes in the oven (set at 350°F). Stuff each tortilla with 1/4 of the fish then top with sour cream dressing and 1/4 of the guacamole. Serve immdediately.
