INGREDIENTS

  • 1 3/4 cup chicken broth
  • 0 1/2 cup tap water
  • 4 Tbsp butter, unsalted
  • 0 1/2 tsp xanthan gum

DIRECTIONS

  1. Pour turkey drippings into a gravy separator or glass measuring cup; drain off and discard as much excess fat as possible. Alternatively, use 1/4 cup butter and 1 3/4 cups chicken broth instead of turkey drippings so that you have a total of 2 cups.
  2. Pour into a small saucepan, add water and bring to a simmer. Whisk in xanthan until dissolved and thickened. Remove from heat and whisk in 1 tablespoon cream (optional).
  3. Taste, stir in salt and freshly ground black pepper if necessary and serve. Each serving is 2 tablespoons.

Cooking Tip

If you've cooked the turkey yourself, use 2 cups of the drippings to replace the butter and chicken stock.
