DIRECTIONS
Ingredient note: Choose a roughly 1 ½ pound butternut squash to obtain 4 cups of raw cubed squash.- Preheat oven to 425°.
- Peel, deseed, and cube squash. In a medium bowl, toss the squash with melted butter, salt, cinnamon, and nutmeg.
- Arrange in a single layer on a rimmed baking sheet, and roast for 15 minutes. Remove from the oven and toss the cubes for even roasting. Roast for another 8-10 minutes, or until tender. Serve warm; one serving is ½ cup of cooked cubed squash.
