1 lb Scallop (Mixed Species)

0 3/4 fl oz Lime Juice

1 tbsp White Wine Vinegar

1 pepper Jalapeno Peppers

1 tsp Garlic

0 1/4 tsp Salt

0 1/4 tsp Black Pepper

0 1/2 fruit without skin and seeds California Avocados

0 1/4 cup Extra Virgin Olive Oil

0 1/8 cup Cilantro (Coriander)
DIRECTIONS
- Bring water to a boil. Add scallops; immediately remove pot from heat and let stand 8 minutes.
- Remove scallops with a slotted spoon and place in a medium bowl. Combine scallops with lime juice, vinegar, finely diced jalapeno, minced garlic, salt and pepper. Toss gently and refrigerate 1 hour for flavors to blend.
- Just before serving, gently toss scallop mixture with avocado cubes, olive oil and cilantro.
