INGREDIENTS

  • 32 oz, raw (yield after cooking, bone removed) Chicken Breast
  • 15 leaves fresh sage
  • 1 tablespoon Unsalted Butter Stick
  • 2 tablespoon Extra Virgin Olive Oil
  • 0 1/2 cup Chicken Broth, Bouillon or Consomme
  • 2 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers

DIRECTIONS

  1. Preheat oven to a warm setting.
  2. Sprinkle chicken with salt and pepper to taste. Loosen the skin of each chicken breast half with your fingers, and gently insert three sage leaves underneath each. Chop remaining sage leaves and set aside.
  3. In a large ovenproof skillet over medium-high heat, heat butter and half of the oil. Sauté chicken skin-side down until nicely browned, about 7 minutes. Reduce heat to medium, turn chicken and continue cooking until cooked through, about 7 more minutes. Transfer to a serving platter and place in oven to keep warm.
  4. Add chicken stock to pan and turn heat up to high. Cook until almost reduced by half, about 5 minutes, scraping up browned bits on the bottom. Transfer broth to a small bowl and set aside.
  5. Wipe out skillet with a paper towel. Heat remaining oil over medium-high heat. Add sliced peppers and sauté until lightly browned and softened, about 5 minutes.
  6. Stir in broth and chopped sage and cook for 1 more minute. Season with salt and pepper and serve over chicken.
