4 large Scallions or Spring Onions

2 tsp Ginger

24 oz, boneless, raw, without skin (yield after cooking) Turkey Cutlet

1 14 oz Crushed Tomatoes (Canned)

1 cup Pumpkin (Without Salt, Canned)

1 cup Tap Water

1 teaspoon Sucralose Based Sweetener (Sugar Substitute)

0 1/2 tsp Salt

0 1/4 tsp Black Pepper

1 oz Cilantro (Coriander)
DIRECTIONS
- Heat 1 tablespoon of the oil in a large soup pot over medium heat. Cook chopped green onions 3 minutes, until softened. Add minced fresh ginger and cook 2 minutes more. Transfer to a bowl.
- Heat remaining oil in pot. Brown turkey pieces in batches, 3 to 4 minutes per batch. Return green onions and ginger to pot. Stir in tomatoes, pumpkin puree, water, sugar substitute, salt and pepper. Bring to a boil.
- Reduce heat to low and simmer, partially covered, 40 minutes, until turkey is tender.
- Stir occasionally. Add fresh chopped cilantro and cook 2 minutes more.
