8 stalks Broccolini, fresh, steamed

1 tablespoon Extra Virgin Olive Oil

0 1/2 cup, chopped Onions

1 tbsp Tomato Paste

1 1/4 cup Heavy Cream

4 slice Smoked Flavored Provolone Cheese Slices

2 oz Prosciutto
DIRECTIONS
Broccolini is a close relative of broccoli, with a slightly milder taste. If you cannot find it, substitute 1/2 pound of broccoli florets. You can also use smoked mozzarella in lieu of provolone.- Prepare pasta according to package directions. During the last 5 minutes of cooking time, add the chopped broccolini. Drain and transfer pasta and broccolini to a large bowl. To steam broccolini, add to boiling water or use a steamer basket cooking for 3-5 minutes until crisp-tender.
- While pasta is cooking, prepare sauce: heat oil in a medium skillet over high heat;add chopped onions and sauté until softened, about 5 minutes.
- Add tomato paste and sauté 2 more minutes, stirring constantly.
- Add cream and cook until sauce has thickened, about 5 minutes..
- Add pasta to sauce and cook until heated through, about 3 minutes. Turn off heat and stir in 4 oz of grated or finely diced cheese and diced prosciutto before serving.
