DIRECTIONS
The basil in this recipe adds a bit of complexity and balance when a pinch of pure stevia (optional) is added to the cream cheese mixture. Enjoy without the basil (or stevia) if you prefer.
- Preheat oven to 350°F. Toast nuts in a single layer for 10 minutes. Cool and then coarsely chop. Set aside. Slice the peach into 6 wedges and set aside.
- In a small bowl combine the softened cream cheese with 1 teaspoon ground cinnamon and a pinch of stevia (optional). Add the nuts, blend to combine.
- Lay out a single slice of prosciutto, place 1 tablespoon cheese mixture on top of peach wedge and top with a basil leaf, place the peach wedge at one end of the prosciutto and roll-it-up. Repeat with remaining ingredients. 1 serving = 3 wrapped peach wedges.
