2 oz Chick Pea Penne Pasta

2 tbsp Light Olive Oil

1 cup Cherry Tomatoes

0 1/2 tsp Salt

0 1/4 tsp Black Pepper

0 1/2 fl oz Fresh Lemon Juice

1 tsp Lemon Zest

0 1/2 cup, whole Black Olives

4 oz Mushroom Pieces and Stems

3 medium (4-1/8" long) Scallions or Spring Onions

8 tbsp Basil

4 oz Feta Cheese
DIRECTIONS
- Prepare pasta according to package directions. Reserve cup pasta cooking water and drain the rest. Transfer pasta to a large bowl and toss with 1 tablespoon of the oil.
- While pasta is cooking, toss halved tomatoes, salt, pepper, remaining oil, lemon juice and lemon zest to combine. Set aside. Prepare the vegetables by slicing the olives and mushrooms, mincing the basil and dicing the green onions.
- When pasta is at room temperature, add reserved tomato mixture, olives, mushrooms, basil, green onions, feta and reserved pasta water, cup at a time if needed, gently tossing to combine. Serve at room temperature.
