DIRECTIONS
Use the Atkins recipe to make Atkins Soy-Free Flour Mix; you will need 1/3 cup.
- Peel and shred sweet potatoes on a grater. Combine sweet potatoes, diced onion, 1/3 cup flour mix, eggs, orange zest, salt, and cinnamon in a large bowl.
- Heat ¼ cup oil in a large skillet over medium-high heat. Drop 2-tablespoon mounds of sweet potato mixture into pan, flattening slightly; fry in batches until golden brown, about 2 minutes per side. Drain on paper towels and serve hot. Add remaining 2 tablespoons oil after 3 batches.
- This recipe makes about 20 pancakes; each serving is two pancakes.
