1 bag Atkins Nacho Cheese Protein Chips

0 1/2 cup parmesan cheese, grated

0 1/4 cup almond flour, super finely ground, gluten free

1 tsp chili powder, 036800328198, organic

0 1/2 tsp black pepper, ground

0 1/2 tsp table salt

1 lrg raw egg

2 med fresh zucchini, with skin

2 1/2 Tbsp canola oil
DIRECTIONS
- In a small food processor, crush Atkins Nacho Cheese Protein Chips into fine crumbs. Add parmesan, almond flour, chili powder, salt and pepper and process until well combined. Place in a flat bottom dish.
- In a small flat bottom bowl, beat the egg.
- Cut the zucchini into fries (about 30 pieces no thicker than ½-inch). Dip zucchini pieces in egg, then coat in the chip coating. Place on a baking sheet and spray evenly with canola oil.
- Heat air fryer to 390°F. Working in batches to make sure the air fryer is not overcrowded and there is a little space between each zucchini piece, air fry for 5 minutes, or until coating is browned and crispy. Gently remove and serve while warm. Each serving is 6 zucchini fries.
These are delicious served with ranch dressing! Use the recipe at this link and add 0.6 net carbs for 2 tablespoons dressing.
Cooking Tip
No Air Fryer? No problem. Bake in a 400°F oven for 15-20 minutes, turning once halfway through the cook time.
