DIRECTIONS
Use the Atkins recipe for Atkins Low Carb Wheat Bread to make bread crumbs from 6 slices of bread. Toast in the oven until dry (or use stale bread) then process in a food processor into bread crumbs.- Preheat oven to warm setting.
- In a shallow bowl or on a plate, combine breadcrumbs, Parmesan cheese, oregano, salt and pepper. Heat 1/4-inch oil in a large nonstick skillet over medium-high heat.
- Prepare two steaks at a time, dipping steaks in egg and water mixture, then coating with crumbs. Sauté until golden brown and coating is crisp, about 3 minutes per side.
- Transfer to oven to keep warm while sautéing remaining steaks. Garnish with parsley and lemon wedges (optional).
