1 1/2 cup, stirred Soy Flour (Full Fat)

1 oz White Cornmeal (Navajo)

1 tsp Baking Powder (Straight Phosphate, Double Acting)

0 1/4 tsp Allspice Ground

0 1/4 tsp Salt

1 tbsp chopped Chives
-
0 1/4 cup Maple Syrup (sugar-free)

3 large Egg
-
3 tablespoon Vegetable Oil

1 cup Whole Milk
DIRECTIONS
- Heat oven to 425°F. Coat 2 mini-muffin pans (12 muffin cups each) with cooking spray.
- In a medium bowl, combine soy flour, cornmeal, baking powder, allspice, salt and chives.
- In a medium bowl combine the maple syrup, eggs, oil and milk. Add the wet ingredients to the dry ingredients. Stir until just combined.
- Drop the batter by tablespoonfuls into the muffin cups, filling to the top of cups. Bake until a toothpick inserted in center of muffin comes out clean, 10-12 minutes. Transfer to a wire rack and cool 5 minutes. Remove muffins from pan and serve warm with butter or sugar-free preserves.
