How to Calculate Atkins Net Carbs

1 cup Kroger Riced Cauliflower, frozen (85g per 3/4 cup)

1 Tbsp Olive Oil
-
2 Tbsp Yellow Onion (chopped)

2 oz Soyrizo, Vegan Chorizo
-
0 1/2 cup Red Bell Pepper (sliced)

1 cup Green or White Cabbage, raw, shredded
DIRECTIONS
- Place frozen cauliflower rice in a microwave safe bowl. Microwave a full power for 3-5 minutes, until steaming and tender.
- While the cauliflower is heating, warm oil in a medium skillet over medium heat. Add onion and sauté for 1 minute, stirring frequently. Add Soyrizo to the skillet and continue to cook, stirring to break up the Soyrizo, for another minute. Add red bell pepper and continue to cook for 1-2 minutes. Add cabbage and cook, stirring constantly, until cabbage begins to wilt and is heated through, about 1 minute.
- Serve the hot Soyrizo sauté over the cauliflower rice.
