DIRECTIONS
Ingredient note: To get the beautiful color, we used Empress 1908 Elderflower Rose Gin for this recipe.
- Make sugar free grapefruit simple syrup: In a medium saucepan over high heat, bring water and 2 tablespoons sweetener to a boil. Reduce heat and simmer for 10 minutes. Pour into a bowl, stir in 1 teaspoon grapefruit zest, cover and allow to cool at room temperature for 20-30 minutes to allow the flavors to extract and blend. Pour into a clean bowl through a fine mesh strainer to remove the solids, gently pressing with the back of a spoon to get as much liquid from the solids as possible. Discard the solids and store the simple syrup in the refrigerator until needed.
- Create rim on 4 glasses. On a small plate, mix 1 tablespoon sweetener and 1 teaspoon grapefruit zest until evenly distributed. Use a grapefruit wedge to moisten the rim, then dip in the sugar-zest blend and set aside to dry.
- Into a small pitcher, gently stir together sparkling water, fresh squeezed red grapefruit juice, gin and simple syrup. Divide ice between the rimmed glasses and evenly pour spritz over, about 1 cup spritz per glass. Garnish each glass with a grapefruit slice. One drink as described is one serving.
Cooking Tip
The color and herby flavor of Empress Elderflower Rose Gin makes this a special drink sure to wow your guests, or treat yourself with an easy drinking summer spritz. Regular gin will also work well in this recipe but won’t give the color seen in the photo. You can make the simple syrup in advance and store in the refrigerator. If they syrup solidifies, mix it with the grapefruit juice until dissolved before adding to the pitcher.
