5 ea string mozzarella cheese

1 Tbsp almond flour, super finely ground, gluten free

1 lrg raw egg

0 1/2 Tbsp tap water

1 bag Atkins Ranch Protein Chips

4 tsp olive oil

1 tsp fresh young green scallions, chopped
DIRECTIONS
- Cut string cheese in half. In one of three shallow bowls, place the almond flour. In the next bowl, whisk together the egg and water. In the last bowl, place crushed Atkins Ranch Protein Chips. Working one at a time, lightly coat each piece of string cheese in almond flour, then dip in the egg mix to coat and finally coat in crushed chips. Place each coated string cheese on a plate and freeze for 30 minutes.
- Heat air fryer to 375°F for at least 3 minutes.
- Remove cheese sticks from the freezer and generously coat in olive oil spray. Place in a single layer in the air fryer and cook for 3-4 minutes, until the cheese is melted and coating is golden but not burning. Remove from air fryer and serve garnished with scallion while warm. Each serving is two cheese sticks.
