INGREDIENTS

  • 0 1/4 cup dry quinoa
  • 1 Tbsp tap water
  • 0 1/2 cup coconut, shredded, unsweetened
  • 0 1/2 cup almonds, sliced
  • 0 1/4 cup pistachios
  • 0 1/2 cup almond butter
  • 3 tbsp sugar free maple flavor syrup, Maple Grove Farms
  • 1 tsp vanilla extract
  • 0 1/2 tsp fresh orange peel, grated
  • 1 pinch table salt
  • 8 truffles Atkins Endulge Milk Chocolate Truffles
  • 2 Tbsp coconut, shredded, unsweetened
  • 0 1/8 cup pistachios

DIRECTIONS

  1. Using a fine mesh strainer, rinse quinoa thoroughly. Place rinsed quinoa into a small bowl and add water.
  2. Warm a small skillet over medium heat. Note we do NOT suggest using a non-stick skillet for this step. Once the skillet is hot, place 1 tablespoon of wet quinoa in the skillet, spreading it out to a single layer. Heat until most of the liquid has evaporated and some quinoa has popped, then scrape the quinoa and shake them out until all the water has evaporated, and the quinoa is becoming golden, 2 to 2 ½ minutes total. Scrape into a medium bowl and repeat for remaining quinoa.
  3. Add ½ cup coconut shreds, sliced almonds, and ¼ cup pistachios (roughly chopped) to the popped quinoa and mix well.
  4. In a medium bowl, stir together almond butter, sugar free maple syrup, vanilla extract, orange zest and salt until very well mixed and thick. Add to the quinoa mix and fold and press together until evenly coated and distributed. 
  5. Scrape into a parchment paper lined 8 by 4 inch loaf pan and press into an even layer. Warm oven on low broil for about 3 minutes. Evenly top quinoa mix with Atkins Endulge Milk Chocolate Truffles and place on the middle oven rack (about 8 inches from heat source) under a low broil for 6-10 minutes, until truffles are melted. Spread chocolate into an even, thin layer and sprinkle with remaining 2 tablespoons coconut shreds and 2 tablespoons pistachios (roughly chopped). Place in the freezer for about 30 minutes, until the chocolate is set. Cut into 8 even pieces and serve. Store leftovers in an airtight container in the refrigerator for up to 5 days. One piece as described is one serving.

Cooking Tip

The hearty texture of these bars leaves you feeling like you treated yourself with a healthy- ish dessert or snack. The bars can be a little crumbly, so be sure to press the quinoa mixture into the loaf pan to form a solid layer before layering on the truffles. Place the pan in the top third of the oven set to low broil to melt the truffles most effectively. Lastly don’t leave the pan in the freezer for longer than 40 minutes before cutting into even servings. Too long in the freezer and the bars will be pretty difficult to cut, and even more difficult to eat.
