×INGREDIENTS
-
0 1/4 cup fresh granny smith apple, sliced
-
0 1/8 tsp cinnamon, ground
-
0 1/8 tsp cloves, ground
-
1 Tbsp butter, unsalted
-
2 Tbsp almond meal, super fine, with skin
-
2 Tbsp flaxseed meal
-
0 1/2 tsp baking powder, low sodium
-
0 1/8 tsp table salt
-
2 Tbsp caramel syrup, sugar free
-
1 ea raw egg yolk, large
-
0 1/2 bar Atkins Caramel Apple Pie Bar
DIRECTIONS
- Chop apple. In a small skillet over medium heat, sauté apple with pinch cinnamon and pinch cloves stirring frequently until warm and beginning to soften, about 5 minutes. Set aside.
- In a mug, melt butter using a high-power microwave, about 1 ½ minutes. Add almond meal, flaxseed meal, baking powder, and pinch salt, using a fork to mix. Add caramel syrup and egg yolk, mixing until evenly combined. Fold in diced Atkins Caramel Apple Pie Bar pieces and sautéed apple pieces. Microwave on high power for 1 ½-2 minutes, until top springs back when tapped. One mug cake is one serving.
