1 cup no sugar added original barbecue sauce, Sweet Baby Ray's
DIRECTIONS
Ingredient note: We suggest using 85% lean ground turkey for best results.
- Heat oven to 350°F.
- In a medium bowl, mix crushed Atkins Chipotle BBQ Protein Chips, minced scallions, egg, garlic powder, salt, and smoked paprika. Gently fold in ground turkey, until evenly combined. Do not overwork, or the meatballs will not be tender.
- Use a tablespoon to evenly measure out and form 32 small meatballs, placing them on two rimmed baking sheets. Bake for 12-15 minutes, until cooked through and internal temperature reaches 165°F.
- While the meatballs are cooking, in a medium saucepan over medium heat, warm the barbecue sauce. Serve warm meatballs with warmed barbecue sauce. Four meatballs with 2 tablespoons barbecue sauce is one serving.
