INGREDIENTS

  • 4 Atkins Low Carb Wheat Bread
  • 7 tablespoon Unsalted Butter Stick
  • 2 large Scallions or Spring Onions
  • 1 clove Garlic
  • 32 oz, raw, without shell, yield after cooking Lobster
  • 4 oz Tillamook Pepper Jack Cheese
  • 2 Tbsp Cilantro, fresh, chopped

DIRECTIONS

Use the Atkins recipe to make Atkins Low Carb Wheat Bread; you will need 4 slices.  Toast them until dry or use stale bread then process in a food processor to make bread crumbs; use 1/2 cup.
  1. Heat oven to 400°F. Butter a 1½ quart shallow baking dish or gratin dish.  Shred the cheese and set aside.
  2. Melt 1/3 cup butter in a small skillet, over medium-high heat. Sauté diced green onions 3 minutes, until softened; add minced garlic and cook 1 minute more.
  3. Place lobster meat in prepared baking dish and drizzle with garlic butter. Toss to coat. Sprinkle with breadcrumbs and then with cheese. Dot with remaining tablespoon of butter.
  4. Bake 15 minutes, until lobster is hot and cheese is melted. Sprinkle with cilantro.
