3 lb Australian Lamb (Trimmed to 1/8" Fat)

0 1/2 tsp Black Pepper

2 tsp Lemon Peel

3 tbsp chopped Onions

0 1/4 cup Parsley

1 fl oz Fresh Lemon Juice
DIRECTIONS
- Prepare a grill, or preheat a broiler. Brush lamb on both sides with 1 tablespoon oil, and sprinkle with 3/4 teaspoon salt and the pepper.
- Grill or broil the lamb on a broiling pan, about 3 inches from heat source: for medium-rare, until an instant-read meat thermometer registers 140°F when inserted in center of lamb steak, 4 to 5 minutes per side; for medium, until thermometer registers 150°F, 6 to 7 minutes per side; for well-done, until thermometer registers 160°F, 8 to 10 minutes per side.
- Cover loosely with foil, and let stand for 10 minutes. Cut into thin diagonal slices. Place lamb and any juices on a serving platter.
- Sprinkle with remaining 1/4 teaspoon salt, the lemon zest, finely diced onion, and chopped parsley. Drizzle with the lemon juice and remaining 1 tablespoon oil.
