DIRECTIONS
- Preheat grill. Make a patty from the ground lamb and season with salt and freshly ground black pepper. Grill lamb burger to desired doneness.
- Top with sliced avocado, sliced onion, and sliced tomato. Carefully wrap burger in lettuce leaves or use the additional lettuce for the cherry tomato poppers.
- Slice the hearts of palm into 1 inch pieces. In a large bowl toss hearts of palm, oil, minced garlic, oregano, salt and pepper. Marinate 20 minutes for flavors to blend. Cut cherry tomatoes in half.
- To serve, spread out the lettuce on a serving platter. Skewer one heart of palm piece and one tomato half on a toothpick. Arrange on platter, scatter olive halves over all and serve with the burger.
