How to Calculate Atkins Net Carbs
Atkins Net Carbs = Total Carbohydrates – Fiber – Sugar Alcohols/Glycerin (if applicable)
×INGREDIENTS
-
2 Tbsp lemon zest
-
2 tsp Salt
-
1 1/2 tsp Black Pepper
-
2 tsp Coriander Leaf (Dried)
-
1 1/2 tsp Ginger (Ground)
-
0 1/2 tsp Cinnamon
-
4 tablespoon Extra Virgin Olive Oil
-
24 oz, boneless, raw Tuna
-
2 tsp balsamic vinegar, regular, 134015
-
2 cup Arugula (Rocket)
DIRECTIONS
- In a small bowl, combine zest, salt, pepper, coriander, ginger and cinnamon. Stir in 2 tablespoons of oil. Rub mixture on tuna steaks.
- Heat 1 tablespoon of oil in a large skillet over high heat until it shimmers. Add tuna steaks and sauté until just cooked through, about 4 -6 minutes, turning once halfway through cooking time.
- Meanwhile, place 2 tsp vinegar in a small bowl. Slowly whisk in 3 teaspoons olive oil (or more) until dressing has slightly thickened. Season to taste with additional salt and pepper.
- Toss 2 cups greens with dressing.
- To serve, cut fish into 1/4-inch slices and lay over greens.
