INGREDIENTS

  • 6 miniature (65 g each) fresh cucumber
  • 2 Tbsp fresh scallions, tops & bulb
  • 1 Tbsp tamari soy sauce
  • 1 Tbsp natural rice vinegar, 42 grain
  • 2 tsp sugar free maple flavor syrup, Maple Grove Farms
  • 1 1/2 tsp Sichuan Chili Crisp (Fly by Jing brand)
  • 1 tsp sesame oil
  • 0 3/4 tsp fresh garlic
  • 1 tsp dried sesame seeds, whole

DIRECTIONS

  1. Wash and slice off ends off cucumbers. To cut mini cucumbers into spirals, place a cucumber between two chop sticks you don’t mind getting nicks on. Slice diagonally every ¼-inch, stopping at the chop sticks so you are not cutting completely through the cucumber. Rotate so the cut side of the cucumber is facing down, place back between the chop sticks, and cut ¼-inch vertical slices (not at a diagonal) stopping at the chop sticks. Slice each spiralized cucumber in half.
  2. Into a medium bowl, place spiralized cucumbers and toss with thinly sliced white and green portions of scallions. Set aside.
  3. In a small bowl, whisk together tamari, unsweetened rice vinegar, sugar free maple syrup, no sugar added chili crisp, sesame oil, and minced or pressed garlic. Pour over cucumbers and toss to fully coat. Sprinkle with sesame seeds and serve. One serving is roughly 3 pieces of dressed cucumber.

Cooking Tip

While cutting the cucumbers into spirals is a cool look, it can be a little bit tricky. The second set of slices cannot be at a diagonal for the spiral to work. But if your spirals don’t completely work, don’t despair! This salad is also delightful with thinly sliced cucumbers. We also suggest tasting the dressing before pouring over the cucumbers, adding more chili crisp to your heat preference. Note that we found a couple of options for no sugar added chili crisp, some with deeper flavors, and some more chili forward. Which ever option you find, it is not difficult to find meals that are elevated with a serving of chili crisp!
