1 shake Atkins Creamy Root Beer Float Shake

0 1/4 tsp xanthan gum

0 1/2 cup heavy whipping cream

3 tbsp sugar free powdered monkfruit sweetener with erythritol, Lakanto

1 tsp vanilla extract

80 chips white chocolate style baking chips, Lily's no sugar added
DIRECTIONS
Equipment note: 8, 3-ounce capacity ice pop molds are needed for this recipe.
- In a blender, combine Atkins Root Beer Float Shake and xanthan gum until well combined and slightly thickened. Set aside.
- In a medium bowl, use an electric hand mixer to whip heavy cream, powdered sweetener, and vanilla extract to very stiff peaks. Fold in ½ cup shake mix until minimal white streaks of cream remain.
- Evenly fill the bottom of each of the popsicle molds with 1/8 cup whipped cream mix. Layer 1/8 cup root beer float shake mix then top evenly with remaining whipped cream mix, a scant 1/8 cup in each.
- Freeze about 1 hour, then sprinkle 10 white chocolate chips over the top of each ice pop and insert sticks. Continue to freeze until solid, about 3 hours more, and enjoy!
Cooking Tip
The whipped cream makes these ice pops decadent and special for any occasion. Be sure to whip to very stiff peaks before folding in some of the shake. We found adding shake to the whipped cream was essential to making sure the ice pops keep their shape once frozen.
