INGREDIENTS

  • 1 Tbsp butter, unsalted
  • 1 Tbsp cream cheese
  • 1 Tbsp canned pumpkin, unsalted
  • 0 1/8 tsp pumpkin pie spice blend
  • 2 tbsp Swerve confectioners erythritol based sweetener
  • 5 tsp vanilla milkshake protein powder, gluten free
  • 18 cookies Atkins Snickerdoodle Crunchy Protein Cookies

DIRECTIONS

  1. In a medium mixing bowl, use an electric hand mixer on medium speed to whip together room temperature butter and room temperature cream cheese until well combined and fluffy. Add canned pumpkin and pumpkin pie spice, mixing on medium-low speed until fully combined. Scrape down the bowl, sprinkle confectioners sweetener over and mix on low until combined. Add protein powder and scrape down the bowl again, then mix on low until combined. Whip on medium speed until fluffy and fully incorporated. Frosting should be stiff, but very well incorporated.
  2. Place half of the Atkins Snickerdoodle Bite-Size Crunchy Protein Cookies on a plate, rounded side down. Use a piping bag (if desired) to spread ½ tablespoon frosting, about 6 ½ grams, onto each of the cookies. Cover each with a second cookie and gently press, creating cookie sandwiches. Refrigerate for 30 minutes, or until frosting is set, and serve. One cookie sandwich as described is one serving.

Cooking Tip

This is a relatively simple recipe, but depends on the butter and cream cheese being room temperature before mixing to get the texture just right. If the frosting is pretty stiff after adding the sweetener, try stirring the protein powder into the frosting, or even mashing it in with a fork, before using a hand mixer for the final mixing. While it is tempting to eat these cookie sandwiches right away, the chilling time in the refrigerator helps stiffen the frosting so it does not squish out from between the cookies when being eaten.
