0 3/4 cup Pumpkin, canned, mashed

DIRECTIONS
- Heat oven to 350°. Prepare a muffin pan with 7 liners.
- In a medium bowl, whisk together plain, unflavored whey protein, flax seed meal, coconut flour, sweetener, espresso powder, xanthan gum, pumpkin pie spice, baking powder, baking soda and salt until well combined.
- In a small bowl, whisk together pumpkin, eggs and yogurt. Add to the dry ingredients and whisk together until completely blended.
- Measure about ¼ cup muffin batter into each muffin liner. Bake for 18-20 minutes, or until a toothpick comes out clean. One muffin is one serving.
