0 3/4 cup hot water

6 tbsp Magic Baker zero sugar baking blend, Splenda

2 1/2 tsp sugar free maple flavor syrup, Maple Grove Farms

0 1/2 cup fresh lemon juice

0 1/2 cup Atkins Creamy Vanilla Shake
DIRECTIONS
Equipment note: This recipe uses a Ninja CREAMi* machine. You will need one empty CREAMi pint along with the machine for this recipe.
- In a medium heat resistant bowl, stir together hot water, granulated sweetener and syrup until fully dissolved. Stir in fresh lemon juice and Atkins Creamy Vanilla Shake until evenly combined. Shake will curdle a bit, which is fine. Pour into the CREAMi pint, cover and freeze for 24 hours.
- Remove frozen pint and process using Ninja CREAMi on the sorbet setting. Serve right away, or re- freeze for 12-24 hours, then use the re-spin setting to get a scoopable texture. Two small scoops (about 2/3 cup of whip) are one serving.

Cooking Tip
We tested this recipe a variety of ways, mainly to determine if curdling the shake led to a difference in flavor of the end product. Luckily we found that there was no discernable difference in taste, so we went with the more simple preparation. To get the very best flavor, allow the sweetened hot water to cool just a bit before you add the lemon juice. Fresh lemon juice is a better match for this recipe than cooked lemon flavor, which is more muted. For an adult version, mix a shot of white rum into the final product.
