3 tbsp sugar free maple flavor syrup, Maple Grove Farms

7 1/2 slice raw bacon, cured
DIRECTIONS
- Heat oven to high broil with rack in the top third of oven. Place washed green chilies on a baking sheet and roast under the broiler, turning halfway through, until both sides are blistered and blackened, about 10 minutes. Gently remove chilies to a bowl and cover with plastic wrap to allow to steam for at least 10 minutes.
- Heat oven to 350°F.
- While the chilies are steaming, in a medium bowl use a fork to combine softened cream cheese, 1 tablespoon sugar free maple syrup, and pepper until well combined. Set aside.
- Carefully peel the skin from steamed chilies, then use a knife to slice off the stem. Cut chilies into 2-inch wide rounds, or 15 pieces. Gently slice one side of the round and lay the chilies flat. Remove as much of the membrane and seeds as desired, removing more for more mild spice level. Place ½ tablespoon cream cheese mix at one end of each chili strip, and roll. Repeat for each chili piece.
- Slice bacon in half and wrap each rolled chili piece in a half slice of bacon. Place on a rimmed baking sheet, seam side of bacon down, and repeat for all chili pieces. Evenly drizzle with remaining maple syrup, and bake for 35 minutes, until bacon is cooked and crispy, and cheese is melted. Remove from oven and allow to cool for 5 minutes before serving. One piece as described is one serving.
Cooking Tip
This keto friendly version of the traditional British snack “Devils on Horseback,” (AKA bacon wrapped dates) uses spicy Hatch green chilies instead of dates. Hatch green chilies have a restricted season, so if you are not fortunate enough to find fresh, you can substitute Anaheim or poblano green chili peppers. Also note that we used thinner sliced bacon for this recipe. Thick sliced bacon may not wrap as easily and might take longer in the oven to crisp.
