1 pear, medium (approx 2-1/2 per lb) Pears

DIRECTIONS
- Cook kale in a large pot of boiling, lightly salted water until bright green and wilted, about 3 minutes. Drain, cool 10 minutes, and squeeze out excess liquid, coarsely chop.
- Heat oil in a large nonstick skillet over medium-high heat. Add sliced onion and cook, stirring occasionally, until lightly golden, about 6 to 7 minutes.
- Stir in sliced pear and cook until crisp-tender, 2 to 3 minutes.
- Add curry and nutmeg and cook until fragrant, about 30 seconds.
- Add kale and salt and pepper and cook, stirring frequently, until tender, about 3 to 4 minutes. Serve warm.
