How to Calculate Atkins Net Carbs
Atkins Net Carbs = Total Carbohydrates – Fiber – Sugar Alcohols/Glycerin (if applicable)
×INGREDIENTS
-
2 Tbsp canola oil
-
6 ea beef hot dog
-
0 1/2 cup fresh yellow onion, chopped
-
3 2/3 cup beef broth
-
1 3/4 cup tap water
-
1 cup canned sauerkraut, in liquid
-
1 tbsp sucralose artificial sweetener
-
2 tsp yellow mustard, prepared
-
1 ea dried bay leaf
-
0 1/8 tsp table salt
-
0 1/8 tsp black pepper, ground
DIRECTIONS
- In a medium pot over medium-high heat, warm oil. Add chopped hot dogs and onions and sauté, stirring frequently, until hot dogs are browning and onions are soft, about 5 minutes.
- Stir in broth, water, sauerkraut (liquid and solids), sweetener, mustard, and bay leaf and bring to a simmer. Reduce heat if needed and simmer 5 minutes, until hot dogs are fully cooked and flavors have blended. Remove bay leaf, stir in salt and pepper, and serve while hot.
- One serving is about 1 ¾ cups soup. Garnish with additional mustard if desired.
Cooking Tip
Did you know that you can easily portion out and freeze soup to save for a busy night down the road? When ready to reheat, either microwave or heat up in a pot over the stove with a splash of water. In appreciation for user feedback, edits were made to this recipe February 2024.
