INGREDIENTS

  • 8 oz, boneless, cooked Chicken Breast
  • 1 tbsp Real Mayonnaise
  • 1 tbsp Sour Cream (Cultured)
  • 1 tsp Curry Powder
  • 0 1/2 tsp Ginger (Ground)
  • 1 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 0 1/2 small (2-1/2" dia) (approx 4 per lb) Apples
  • 0 1/2 stalk, medium (7-1/2" - 8" long) Celery
  • 1 oz English Walnuts

DIRECTIONS

Serve this savory chicken salad on a bed of lettuce. Or make an open-face sandwich or roll it in a wrap. Just be sure to count the extra carbs.
 
  1. Dice chicken breast into 1/3-inch cubes.
  2. In a bowl mix mayonnaise, sour cream, curry powder, ginger and sugar substitute until smooth.  Dice the apple and celery.
  3. Add chicken, apple, celery and walnuts to the mayonnaise mixture. Mix until combined.

Cooking Tip

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
