4 oz, boneless, cooked Fresh Ham

2 lb Collards

2 cup Chicken Broth, Bouillon or Consomme

4 fl oz Sauvignon Blanc Wine

0 1/4 cup Vinegar (Cider)

1 oz, raw (yield after cooking) Salt Pork

1 tsp Crushed Red Pepper Flakes

1 tsp Salt

0 1/2 cup Unsalted Butter Stick
DIRECTIONS
- Heat oil in a large heavy skillet with a tight-fitting lid over medium-high heat. Small dice the onion and ham. Add them to the hot oil and sauté until lightly browned, about 4 minutes.
- Remove the hard stems from the collard greens and coarsely chop. Add to the pan along with the broth, wine, vinegar, whole salt pork, red pepper flakes and salt; stir to combine. Bring mixture to a boil. Reduce heat, cover and cook 1½ hours, stirring occasionally.
- Uncover and add butter. Cook an additional 10 minutes, with cover off, stirring occasionally. Discard salt pork and serve immediately.
