0 1/2 tsp Xanthan Gum

0 1/2 tsp Salt

0 1/2 tsp Baking powder

4 Tbsp Coconut Oil

2 each Egg

1 cup Atkins Creamy Vanilla Shake

1 tbsp Erythritol
-
0 1/2 cup Coconut, shredded, unsweetened
DIRECTIONS
- In a large bowl, whisk together the coconut flour, xanthan gum, salt, and baking soda.
- Melt the coconut oil and set aside to cool. In a medium bowl, whisk together the eggs, Atkins Creamy Vanilla Protein Shake, coconut oil and erythritol.
- Add the shake mix to the dry ingredients and whisk until smooth. Fold in the coconut shreds.
- Heat a waffle maker on the lowest heat possible. Use a large soup spoon to scoop two spoonful’s into each of four waffle sections. Close the waffle maker and cook for at least 10 minutes or until you no longer see steam coming from the waffle maker, the waffles are golden on the outside and have crispy edges.
- Remove from waffle maker and let cool for 2 minutes before serving.
