DIRECTIONS
- Preheat broiler.
- In a large oven-proof skillet, sauté the chorizo, breaking it up into bite-sized pieces over medium-high heat until cooked through; about 5 minutes. Drain off excess fat and leave in the pan. While chorizo is cooking, shred the cheese and dice the tomatoes and set both aside.
- Mix green chilies and tomatoes to evenly distribute with the chorizo. Pour in lightly beaten eggs, and top with shredded cheese. Cook over medium-high heat for 4-5 minutes then place pan under the broiler for 3-4 minutes until light and slightly puffed. Serve immediately.
