0 3/4 cup Sucralose Based Sweetener (Sugar Substitute)

0 1/4 cup, chopped English Walnuts

2 Tbsp Whole Grain Soy Flour

3 large Egg White

4 tablespoon Unsalted Butter Stick

1 tbsp Cocoa Powder (Unsweetened)

2 tsp Vanilla Extract
DIRECTIONS
- Preheat oven to 400°F. Line a baking sheet with a silpat mat (available at most baking shops).
- In a food processor, pulse sugar substitute, nuts and soy flour until finely ground, about 45 seconds. Set aside.
- In a small bowl, stir egg whites, melted butter, cocoa powder and extract until smooth. Pour egg mixture into the dry ingredients and pulse for 15 to 20 seconds, scraping down bowl as necessary.
- Drop cookie batter by teaspoonfuls onto baking sheet. Spread each cookie with the back of a spoon to 2½ diameter (should be very thin). Bake for 7 to 8 minutes, until set. Repeat to make 30 cookies.
- Remove cookies from baking sheet with an offset spatula and cook on a rack; repeat with remaining batter.
