1 cup Whole Grain Soy Flour

1 tsp Baking Powder (Straight Phosphate, Double Acting)

0 1/2 cup Unsalted Butter Stick

0 1/2 cup Sucralose Based Sweetener (Sugar Substitute)

1 tbsp Cocoa Powder (Unsweetened)

1 tsp dry Coffee (Instant Powder)

2 oz or 1 scoop Chocolate Whey Protein

3 large Egg (Whole)
DIRECTIONS
- Heat oven to 350°F. Spray mini muffin tins with cooking spray.
- Process almonds in a food processor in pulses until finely ground. Add soy flour and baking powder; pulse to combine.
- In a large bowl, beat butter and sugar substitute with an electric mixer until fluffy, about 2 minutes. Beat in cocoa powder, coffee powder, and 2 oz protein powder. Add eggs one at a time. Mix in almond mixture with a spatula. Divide batter in muffin tins, filling each 2/3 full. Bake 20 minutes, until set.
