INGREDIENTS

  • 2 tbsp chopped Chipotle Peppers in Adobo Sauce
  • 2 1/2 tsp Fresh Lemon Juice
  • 1 fl oz Fresh Lime Juice
  • 2 clove Garlic
  • 1 1/2 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 2 lb Pork Loin (Tenderloin, Lean Only)
  • 2 tbsp Cumin
  • 1 1/2 tbsp Canola Vegetable Oil
  • 1 tbsp Salt
  • 0 1/2 tsp Black Pepper
  • 2 31/48 oz Cilantro (Coriander)
  • 0 1/3 cup, chopped English Walnuts

DIRECTIONS

  1. Heat grill pan or outdoor grill to medium-high. Combine chipotles, lemon juice, lime juice, garlic (minced) and sugar substitute in a blender; purée.
  2. Rub pork with cumin, oil, salt and pepper. Grill 18 to 20 minutes, rolling the meat every 3 to 4 minutes to ensure even cooking. Rest on cutting board 5 minutes.
  3. Combine cilantro and walnuts in a small bowl. Cut pork into 1/2-inch slices, drizzle with sauce, sprinkle with cilantro mixture and serve.
