INGREDIENTS

  • 1 1/2 lb raw ground beef, 20% fat
  • 0 1/4 cup fresh onion, mature, chopped
  • 0 1/4 cup fresh green bell pepper, chopped
  • 15 oz canned tomato sauce
  • 0 1/4 cup canned tomato paste
  • 1 Tbsp sucralose artificial sweetener, granular
  • 0 1/4 tsp black pepper, ground
  • 2 pinch table salt
  • 6 cup fresh romaine lettuce, shredded
  • 6 oz cheddar cheese

DIRECTIONS

  1. In a medium non-stick skillet over medium-high heat, brown ground beef until almost cooked through, about 6 minutes. Add onions and peppers and continue to sauté until meat is cooked through, about 4 minutes more.
  2. Drain off excess fat from the skillet and add tomato sauce, tomato paste and granular sugar substitute and season with salt and freshly ground black pepper. Allow to simmer over low heat for 30 minutes.
  3. Serve immediately over shredded Romaine topped with cheddar. One serving is 1 cup shredded lettuce, a rounded 1/2 cup of cooked meat and vegetables, and 1/4 cup shredded cheddar cheese.
