DIRECTIONS
Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe, you will need 1 1/2 cups.
- Preheat oven to 350°F.
- In a large bowl, combine flour mix, sucralose, and baking powder. Add sour cream, eggs and melted butter, and mix thoroughly with a spoon or spatula.
- Lightly coat mini muffin tins with non-stick vegetable oil spray (or use paper mini muffin cups).
- Spoon 1 rounded tablespoon batter into each mini muffin well and bake for 18-22 minutes or until done. Recipe makes 24 mini muffins. *Add berries if desired but remember to account for additional Net Carbs.
